Jeff Williams

Jeff is a chef by trade. He started his career working in country clubs on Cape Cod Massachusetts. He has forgone traditional culinary school opting for real world experience learning from some of the best chefs and restaurateurs in the world. He's worked across the country and in Europe; From New England to New Orleans, New York, The Pacific North West to Sweden and has settled in the Midwest. He is currently the Executive Chef and Managing Partner of The Press Room.

Anton Valkov

Anton was born in Bulgaria, and while there received his degree in Hospitality from Sofia University. His first move to America was to North Carolina where he accepted a role as an assistant kitchen manager. After a few years he came up to Chicago. In 2010, he started working at Sable Kitchen & Bar as a bartender. During his tenure there, Sable received numerous nominations for Tales of the Cocktail, as well as made it on USA Today’s best 10 hotel bars in the country. Most Recently he was the bar manager/Sommelier at the Kimpton Gray Hotel. Anton also is a Certified Sommelier from CMS. When he is not at work you can find him hanging out with his 2 daughters and beautiful wife.

Petros Papatheofanis

Petros grew up in restaurants since he was a kid. His father had 2 restaurants before passing away. Petros acquired his Hospitality Administration degree from Northern Illinois University in 2012, and upon graduation started working in River North at Sable Kitchen & Bar. Starting as a floor manager, he moved into the General Manager role in 2015.  In 2017 he was the opening General Manager for Proxi Restaurant in West Loop, which was nominated by Jean Banchet Awards for Best New Restaurant, and voted Chicago Magazines top 10 openings in 2017. When not at work he enjoys hanging out with his wife trying out new restaurants.

Cristian Mendoza Jarquin

Cristian’s passion for food started at an early age. Throughout his years of schooling, starting as early as high school, he worked in various restaurants holding different positions. Not only did Cristian’s jobs involve food, but one of his favorite past times is to find the best food and drinks in Chicago and anywhere he travels to. He graduated with his bachelors in Nutrition from UIC, and then obtained his Masters Degree from Loyola in Dietetics. In 2014 he passed his exam and became a Registered Dietitian. Cristian began work as a Clinical Dietitian, but quickly realized that was not his path. In 2015, he made the career change to better align with his passion for not just food, but for hospitality as well. He was the General Manager for HandCut Foods, a school food service provider; helping to change the industry by providing local foods and customer-centric service.
